Great for fruit kvass
I’ve used many raw honey’s for my home made fruit kvass over the years, but for whatever reason, I’ve found this to be the best, it’s got a mild flavour that doesn’t take over the fruit, and the honey clearly has all the right raw properties needed for the fermentation, my husband loves this honey on toast as well, I have to hide it from him.

Rare rapeseed honey
I like honey. I love rapeseed honey. Sadly, until now, I have never been able to find a honey even remotely close to the first jar I ever bought. The unprocessed honey in that one was like chewing mackintosh's toffos. This though, whilst it is a little more like solid fudge than toffee, comes a very close second. It is a real spoon-bender, as is the nature of raw rapeseed honey, a good indication of how basically unprocessed it is (a word of warning for anyone trying to scoop this up with flexible spoons, they really really won't do the job). For diabetics - although there is some research that suggests it does not promote as high an insulin spike, all honey, whatever the label states, is roughly 80% sugar, of which around half is fructose and the rest glucose. For anyone not keen on spoon-benders - gently, very gently, heat the contents of the jar, checking and stirring every few seconds, until some softens just enough to be able to mix together with the still unsoftened contents to create a smooth paste. This will cool to, and should remain, a more spreadable texture.

Lovely honey
The first thing I noticed was the size of the jar - it is huge! I suppose that would have been obvious had I taken any notice of the product details, but anyway this made it extremely good value for money in my books. The honey is really lovely, like nothing you can buy on the supermarket shelf and you really can taste the difference. The only downside with this particular honey is its spreadability - or lack of it. It's not much better than butter from the fridge. So for spreading on toast it's pretty hopeless (unless you like cold ripped up toast), but for eating by the spoonful it is pure heaven! I will be buying again - but at my present usage/size of jar, not for a very long time!
